Healthy Brown Rice Salad –
Ingredients Healthy Brown Rice Salad –
1/2 cup brown rice, cooked
1 cup spinach leaves
1/4 green capsicum,cut into strips
1/4 red capsicum, cut into strips
1/2 carrot, cut into thin strips
1/4 cup sweet corn, boiled
5 to 6 strawberries, quartered
2 tbsp cranberries
1/4 onion, chopped
2 tbsp whole almonds , toasted and chopped
50 grams feta cheese, cut into pieces
for dressing
2 tbsp extra virgin olive oil
2 teaspoons apple vinegar
1 teaspoon honey
1 clove garlic, finely chopped
1 pinch salt
1 teaspoon black pepper powder, freshly ground
How to Make Healthy Brown Rice Salad –
To make Brown Rice Salad recipe, first spread a layer of lettuce leaves in a plate.
Next, spread the brown rice (which is pressure cooked in a pressure cooker for 2 whistles) and then distribute the remaining ingredients evenly on the plate.
Finally sprinkle with almonds and cranberries. Crumble feta over salad.
Keep the salad in the refrigerator until needed. (Optional) Whisk all the ingredients listed under ‘For the Dressing’ in a small bowl. Serve the Brown Rice Salad
