Delicious Brownie

Ingredients Delicious Brownie
200 gms dark chocolate (70% cocoa)
¾ cup (140 gms) butter
1 cup (245 gms) sugar
¼ cup (60 residue) curd
1 tsp engineer’s essence
1½ cups (215 gms) maida/plain flour
¾ cup (60 gms) cocoa powder

½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
¼ cup milk
Firstly, roughly chop 200 gms dark chocolate. I have used 75% cocoa dark baking chocolate.
Melt ¾ cup butter in a pan. Pour the melted butter over the chocolate. Stir continuously till the chocolate melts completely. Now add 1 cup sugar and stir well till the sugar melts. Also, add ¼ cup curd and 1 tsp vanilla essence.
Stir well till the mixture becomes smooth and silky. Sieve and add 1½ cups all-purpose flour, ¾ cup cocoa powder, ½ tsp baking powder, ¼ tsp baking soda and ¼ tsp salt. Make sure there are no lumps in the flour. Mix well using cut and fold method.
Now add ¼ cup milk and mix till the batter forms a smooth thick consistency. Do not over mix as the cake may turn rubbery and chewy. Pour the cake batter into a square cake mould
Place butter paper at the bottom of the cake and make sure to grease the mould to prevent sticking. Pat twice to remove any air added in the batter. Place the cake tray in a preheated oven. Bake the cake at 180 degree Celsius or 356 degree Fahrenheit for 30 minutes.
Bake until the toothpick comes out clean. Cool the cake completely. You can see the chocolate marks on the toothpick, which indicates the fudginess of the cake. Finally, enjoy the eggless brownie cake by cutting it into the shape of your choice.
