Kaju Katli

one cup cashew nuts
half cup sugar
1/4 cardamom powder
ghee for lubrication

How to Make Kaju Katli
Put one cup cashew nuts in the mixer and make a fine powder. Put a pan on low flame, add sugar and water in it and boil it. Keep stirring the sugar and water until the sugar dissolves. When the sugar dissolves, boil the mixture until it becomes thick and sticky. Now slow down the flame and add cashew powder and cardamom powder to this mixture and mix it well.
Stir the mixture until it starts to resemble a big lump. This will take about 7 minutes. Turn off the gas and leave it to cool for 3 to 4 minutes. When it cools down, knead it a little with your hands so that it becomes soft. If the mixture becomes too dry then add a few drops of milk and knead it. Now apply ghee on the back side of a plate and grease it. Pour the prepared mixture on the greased surface and apply ghee on your palms and the rolling pin to make it smooth. Roll out the mixture with a rolling pin.
Now cut it into square pieces with the help of a knife. Let it cool for three to four minutes. Separate the pieces and you can decorate it with silver work. Your Kaju Katli is ready, you can keep it for 20 to 25 days and eat it.
