Crispy Ghevar
Ingredients for making Ghevar
Flour – 2 cups
Ghee – half cup
Cold milk –
half cup Sugar –
1 cup Ice cubes –
1 tray Cardamom powder –
1/2 tsp Lemon juice –
1 tsp Dry fruits –for decoration
Oil/Ghee – for frying
How to make Ghevar
To make Ghevar, first take a big mixing bowl and add ghee in it. After this, take a big piece of ice and start rubbing it in ghee. Rub it until the ghee becomes thick and creamy. It may take 5 minutes for this to happen. After this, add flour to this ghee and mix it well with ghee. Now prepare a thick batter by adding condensed milk and 1 cup cold water to the mixture of ghee and flour.
Now add one more cup of cold water to this batter and beat it well for 5 minutes. Now add one spoon lemon juice in it. The batter has to be whipped until all the lumps present in it disappear. The batter of Ghevar will be completely ready. Now keep the ghevar in the fridge for some time and cool it.
Now take a pan and add ghee/oil in it and heat it. When the oil starts boiling, add 2 tablespoons of batter at a distance. Now the batter will separate. Now once again pour 2 tablespoons of batter in a thin stream in the middle, keeping it away from oil. Keep in mind that while pouring the batter, there should be a hole in the middle. Now turn the gas flame to medium and fry the ghevar until it turns golden brown.
Ghevar has to be fried until its bubbles disappear completely. After this, take them out and keep them in a separate vessel. Now to make syrup, take one cup sugar and 1/4th water and heat it in a vessel. Boil it till two strings appear in the syrup. After this, dip the ghevar in this syrup. Finally garnish the ghevar with dry fruits and cardamom powder. Flavorful Ghevar is ready.
